Ingredients

250 g  Penne

2 Tbsp  Olive oil

1/2   Red onion

1/2   Red pepper, cubed

1/2   Green pepper, cubed

2 cloves   Garlic, crushed

2   Nam Chicken breast fillet

1/2 tsp  Salt

1/2 tsp  Freshly ground black pepper

1/2 tsp  Paprika

1/2 tsp  Dried basil

840 g  Canned diced tomatoes

1/4 c  Cream

1/4 c  Parmesan, grated

1/3 c  Mozzarella, grated

Instructions

Step 1

Bring water to a boil and cook penne for 8 - 10 minutes until al dente.

Meanwhile, cut chicken into 2 cm cubes and season with paprika, basilsalt and freshly ground black pepper.

Step 3

Heat a large skillet over medium heat and add olive oil. Stir in onionred pepper and green pepper with a pinch of salt, cooking for 5 minutes until soft. Add garlic and stir. Increase heat to medium-high and add chicken in a single layer. Cook for 5 - 6 minutes until browned, then flip and cook for another 5 - 6 minutes.

Step 4

Stir in diced tomatoes, cream and parmesan cheese, mixing well to combine. Stir in penne. Simmer for about 2 minutes until heated through and serve.
