Ingredients

375 g  Spaghetti

1 tsp  Salt

1 Tbsp  Olive oil

500 g  Beef mince

2 cloves   Garlic, crushed

1 tsp  Smoked paprika powder

250 g  Cherry tomatoes

1/2 c  Beef stock

2 Tbsp  Lemon juice

100 g  Baby rocket leaves

1 Tbsp  Capers (optional)

1/2 c  Parmesan, shaved

1 tsp  Lemon zest

Instructions

Step 1

Cook the pasta in a large saucepan of salted boiling water following packet instructions or until al dente. Drain.

Meanwhile, heat oil in a large frying pan over high heat. Cook onion, stirring, for 5 minutes or until softened. Add the mince and cook for 5 minutes or until browned, stirring with a wooden spoon to break up lumps. Add garlic and paprika powder and cook for 2 minutes, stirring continuously.

Step 3

Add tomatoesstock and lemon juice. Bring to the boil. Reduce to low heat and simmer for 3 - 4 minutes or until tomatoes are soft. Add the spaghetti and capers and gently toss to combine. Divide among serving plates. Top with parmesan shavings, rocket and lemon zest and serve.
