Cook the spaghetti in a large saucepan of salted boiling water for 8 - 12 minutes or until al dente. Drain.
Meanwhile, heat the oil in a large deep frying pan over medium-high heat. Add the onion, celery and carrot and cook for 5 minutes or until just softened, stirring regularly.
Add the chicken mince and cook for 7 minutes or until browned, stirring with a wooden spoon to break up any lumps. Add the tomato basil pasta sauce and bring to a simmer. Season with salt and pepper. Stir in the spinach and cook for 5 minutes or until just wilted.
Add the spaghetti to the chicken mixture and stir until heated through. Serve topped with parmesan and parsley.
