Cook the tagliatelle in a saucepan of boiling water following packet directions or until al dente. Drain well.

Meanwhile, heat the oil in a large frying pan over high heat. Add the prawns and cook, turning, for 3 - 4 minutes or until prawns curl and change colour. Add the snow peas and garlic and cook, stirring, for 2 - 3 minutes or until just tender. Add the chilli (optional), spring onions and spinach and cook, stirring, for 2 minutes or until spinach wilts.

Raw prawns (peeled and deveined, leaving tails intact)
Snow peas (trimmed and halved)
Garlic (crushed)
Spring onions (thinly sliced)
Baby spinach
Large red chilli, thinly sliced (optional)
Add the tagliatelle to the pan. Toss until heated through. Season and divide among serving bowls.
