Cook spaghetti in boiling salted water for 8 - 10 minutes or until al dente. Drain, reserving 1 cup of cooking water.
Meanwhile, sauté bacon and onion for 8 - 10 minutes in a large deep skillet over medium heat, stirring occasionally, until bacon is browned and onions are caramelised. Add brussels sprouts and garlic and sauté for about 2 minutes, stirring, until leaves are bright green.
Stir in wine, scraping brown bits from bottom of skillet. Add boiled pasta, grated parmesan, and 1/2 to 3/4 cup reserved cooking water. Stir until parmesan is melted and pasta is creamy and well coated. Season with salt and pepper.
