Ingredients

300 g  Fusilli pasta

1 Tbsp  Extra virgin olive oil

3 cloves   Garlic (crushed)

75 g  Baby spinach

2   Chicken Breasts (thinly sliced)

1/2 c  Tomato strips (semi-dried)

150 g  Basil pesto

250 g  Smooth cream cheese

1/2 c  Small basil leaves

1/2 c  Parmesan cheese (finely grated)

Instructions

Step 1

Cook pasta following packet directions (8 to 12 minutes), until tender. Drain, reserving 1/2 cup cooking water.

Preheat grill on medium-high.

Step 3

Meanwhile, heat oil in a large, ovenproof frying pan over medium-high heat. Add garlic and spinach. Cook, stirring, for 1 minute or until spinach is wilted.

Add pasta, reserved cooking water, chicken, tomato, pestocream cheese and 1/2 the basil leaves. Toss gently to combine. Sprinkle Parmesan cheese over pasta mixture. Place frying pan under grill for 2 minutes or until browned. Serve sprinkled with remaining basil.
