Chicken, Tomato and Spinach Pasta

Ingredients

3 Tbsp  Olive oil

4   Nam Chicken breast fillets, cut into pieces

3 cloves   Garlic, crushed

410 g  Basil tomato paste

2 c  Baby spinach

1/4 c  Basil leaves, chopped

1 pinch   Salt and pepper

125 g  Spaghetti pasta

Instructions

Step 1

Boil the spaghetti in salted water, according to packet instructions.

Meanwhile, heat the oil in a large frying pan, then add the chicken and stir fry for about 5 minutes. Add the garlic and fry for a further 2 to 3 minutes.

Add Basil tomato paste and stir to mix.

When the sauce comes to the boil, add the baby spinach and the basil, then reduce the heat and simmer for a further 3 to 5 minutes or until the spinach wilts just a little. Remove from heat and season to taste with salt and pepper.

Drain the pasta well and add to the frying pan, then toss well to evenly mix the ingredients. Heat through and serve immediately.
