Ingredients

400 g  Penne

1 Tbsp  Olive oil

1   Onion, finely chopped

2 cloves   Garlic, finely chopped

300 g  Lean bacon, roughly chopped

300 ml  Cream

1/4 c  Chives, chopped

1 bunch   Parsley, finely chopped

1/2 c  Parmesan cheese, grated (plus extra shavings to serve)

1/2 tsp  Ground black pepper

Instructions

Step 1

Cook penne in a saucepan of boiling water for 8 - 10 minutes or until al dente. Drain and return to saucepan.

Meanwhile, heat oil in a large frying pan over medium heat and sauté the onion and garlic for 2 - 3 minutes. Remove the onion and garlic from the pan and set aside.

Return the pan to the heat and brown the bacon over high heat until crispy. Place bacon on paper towels to drain and pour excess fat from the pan.

Reduce heat to low and stir together cream, parsley, chives, parmesan cheese and freshly ground black pepper in the fryig pan. Add the fried oniongarlic and bacon. Stir for 2 - 3 minutes until well combined and heated through.

Pour the sauce over the freshly cooked pasta and toss to combine. Serve hot, garnished with shaved parmesan.
