Creamy Spaghetti with Smoked Salmon

Ingredients

500 g  Spaghetti

2 Tbsp  Olive oil

1   Red onion, thinly sliced

2/3 c  Sour cream

150 g  Baby spinach

20 g  Fresh dill, chopped (reserve a few sprigs to garnish)

250 g  Smoked salmon, flaked

1/4 c  Lemon juice

1/2 tsp  Salt

Instructions

Step 1

Cook the spaghetti in a large saucepan of salted boiling water for 8 - 10 minutes or until al dente. Drain, reserving 2/3 cup of the cooking liquid. Return the spaghetti to the pan.

Meanwhile, heat the oil in a large frying pan over medium heat. Cook the onion for 2 minutes or until soft, stirring continuously.

Add the sour cream and reserved cooking liquid to the frying pan and stir. Season with salt and bring to the boil. Add the spinach, chopped dill, salmon and lemon juice. Cook for 1 minute or until heated through. Pour over the spaghetti and toss to combine. Sprinkle with reserved dill sprigs amd serve.
