Bring a large pot of salted water to a boil over high heat. Meanwhile, heat a large heavy frying pan over medium-high heat. Add the sausage meat and cook for about 6 minutes or until golden brown, breaking meat up with a wooden spoon. Add the kale and garlic. Cook for about 4 minutes, or until the kale is wilted. Add the wine and passata, and stir to combine. Bring to a simmer and cook for about 3 minutes, or until liquid is reduced by one-quarter.
When the water has come to a boil, add the penne to the pot and cook, stirring often so the pasta doesn’t stick, for about 8 minutes or until al dente. Drain, reserving cooking water. Put pasta in a large bowl.
Add the sauce to the penne, adding enough of the reserved cooking water to thin the sauce to the desired consistency. Season to taste with salt and pepper. Sprinkle with the parmesan cheese and serve immediately.
