Ingredients

1 1/3 c  Pasta rice

1 tsp  Salt

2 Tbsp  Olive oil

1   Lemon (zest, juice and grated rind)

2 Tbsp  Fresh flat-leaf parsley, chopped

1 Tbsp  Fresh chives, chopped

50 g  Baby rocket, roughly shredded

1 pinch   Freshly ground black pepper

2 Tbsp  Parmesan cheese, finely grated

Instructions

Step 1

Cook pasta rice in a a saucepan of salted water for about 10 minutes or until al dente. Drain. Transfer to a heatproof bowl.

Add lemon zest and juice, oil, parsley, chives and rocket to the pasta. Season well with pepper. Toss to combine.

Step 3

Sprinkle with lemon rind and parmesan. Serve immediately.
