Cook pasta rice in a a saucepan of salted water for about 10 minutes or until al dente. Drain. Transfer to a heatproof bowl.

Add lemon zest and juice, oil, parsley, chives and rocket to the pasta. Season well with pepper. Toss to combine.

Baby rocket, roughly shredded
Freshly ground black pepper
Lemon (zest, juice and grated rind)
Sprinkle with lemon rind and parmesan. Serve immediately.
