Ingredients

375 g  Tagliatelle pasta

2 tsp  Lemon zest

1/4 c  Lemon juice

1   Chilli, deseeded and finely sliced

340 g  Cherry tomatoes, halved

450 g  Shrimp, peeled and deveined

2   Anchovies, finely chopped

2 Tbsp  Olive oil

1/4 c  Green olives, pitted and chopped

1/2 c  Parsley, chopped

1/4 c  Parmesan cheese, grated

Instructions

Step 1

Cook the pasta according to package instructions. Reserve 1 cup cooking water and drain. Return to the pot and toss with lemon zestlemon juice, and chilli.

Step 2

Heat the oven grill. On a large baking tray, toss the cherry tomatoes, shrimp, and anchovies with 1 tablespoon oil. Grill until tomatoes burst and shrimp are opaque throughout, 5 to 6 minutes. Transfer to the pasta pot (along with any pan juices).

Step 3

Add the olives, parsley, Parmesan, and remaining tablespoon oil to the pot and toss to combine, adding some reserved cooking liquid if pasta seems dry.
