Fusilli Pasta in Lemon Garlic Sauce

Ingredients

3 c  Fusilli pasta

1/4 c  Butter

4 cloves   Garlic, finely chopped

1 Tbsp  Chilli flakes

1 pinch   Salt

2 Tbsp  Lemon juice

1 tsp  Lemon zest

1 bunch   Basil leaves, chopped

1/4 c  Parmesan cheese, grated

1 c  Cherry tomatoes, finely sliced

Instructions

Step 1

Boil the pasta according to packet instructions, until al dente. Drain and set aside.

Step 2

Meanwhile, heat a large pan, add the butter, garlic, and red chilli flakes. Sauté, for about 2 minutes, until the butter melts and the garlic flavour infuses into the melted butter.

Step 3

Add the lemon juice, a large pinch of salt and give a quick stir. Keep cooking for 2 to 3 minutes until the mixture boils and thickens.

Add the cooked pasta and toss well until evenly coated. Turn off the heat.

Step 5

Add the basil leaveslemon zest, Parmesan cheese and tomatoes, and toss well until combined. Garnish with extra basil and Parmesan, and serve hot.
